Favourite sushi bar in Victoria. Great location to walk to if you’re downtown, near great shops off government street. Service is always excellent. The atmosphere is quiet and a great layout, not a huge place so at peak times you may have to wait for a table. I’ve purchased takeout as well and quality is still superior to other sushi takeout. A favourite place of mine for lunch. The food is top notch, always peak freshness, excellent presentation as well.

All the food was fresh and delicious I only had a selection of nigiri.
I have eaten at many sushi restaurants and this one definitely places among the very best. The fish was so fresh with a buttery texture, the green tea refreshing and well-presented, the service was excellent and the prices were good. If I lived here I would eat here at least once per week. Highly recommended!
Ebizo is the best sushi in Victoria but their customer experience still suffers in comparison to the experience in Japan. Seafood is really solid, tempura was under-done. Last call for food is 7:30 pm which is not reasonable. I guess that's a Victoria issue, but it still feels bad, trying to have an extended night out (and paying the associated premium for it).
Make a reservation, because the fact that our reserved group of 6 (the max they'll reserve for) went on a Tuesday evening and the place was just packed, says it all. Really good food; really good service. If you love sushi, do not miss this opportunity. And if you have celiac disease, just ask for gluten-free options and they'll have you covered. I went there with my gluten-free Meetup and it was excellent. Reasonable prices too, considering the times we live in. A great date-night idea in the heart of downtown.
Absolutely by far hands down no questions asked the best sushi restaurant in North America. If in Victoria you must try it. Nothing compares. Salmon rolls are awesome. The dynamite and Cali rolls are works of art. This stuff belongs in a museum. Long time customer, 10+ years and the quality has always been superb with friendly hosts.
If you don't reserve, expect a wait. It is still worth it. Even in the rain.
Don't claim to be a sushi expert but I have eaten in some of the more famous places in the bigger cities and none could compare. It is that good.

The staff was all nice and it was super busy when we walked in. The food was good, especially the vegetable tempura, but even after the restaurant was no longer busy it took way longer than it should have to get our sushi. There was almost a 45 minute gap between our tempura and the sushi. Besides that everything else was great.
I’ve reviewed Ebizo previously and just wanted to update. This place is still the BEST place on Vancouver Island for sushi and tataki! Great staff and atmosphere.
This place is a Hidden Gem of Victoria! I was recommended this by one of my colleagues and told me that it was where all of the locals go for food. He was right. The service what is very classy and timely. They brought out a warm fresh towel to wash your hands with, and tea at the very beginning and made sure that you were always taken care of in a very timely fashion.
To begin with the Miso soup was astounding. Most restaurants water down their miso soup and don't allow any of the real flavour to come through. Clearly Ebizo doesn't do that. They have a great depth of flavour to the paste that they use for their miso and use a lot of it to have a great depth of flavour.
Next I have the sushi me which was wonderful. There was a great richness to add and was very high quality. It melted in your mouth as you ate it. There was a great variety and I would highly recommend the platter.
However the undeniable Underdog in Winter for me was the tempura. The batter that they used was so light buttery and fragrant. It was unlike any other emperor that I have ever had. And to top it all off they used a variety of vegetables that I've never had contemporary form. They had carrots, potatoes, string beans, mushrooms, and turnips. If you were to go here and this is something that you need to get!
