I have been coming to Paramount on Yonge & Eglinton for a while now. 
After tasting several other Middle Eastern restaurants, I have come to the conclusion that Paramount is the most genuine mediterranean restaurant that reminds me the taste of my home country. 
It offers several Lebanese dishes and trust me when I say that their hummus is homey and very tasty to the original platter from home. 
I ordered the falafel sandwich combo which tasted very yummy. Remind them to be extra generous with the sauce as once I forgot and my sandwich was a bit dry. They are considerate and would accomodate the dish to your taste bud (contrary to many other places). The fries were extra crispy and the vines leaves on point. 
The atmosphere and the arabic music makes you travel to the Arabian continent and the staff is very attentive, smily and genuine. 
You want to try some mediterranean dishes, Paramount is the place to go to. 

ps: Try the authentic Lebanese dessert "Kneffeh" you'll thank me later :)

If you want genuine and authentic (not fast food level ) taste of Beirut then you got your adress ! 
Very authentic Lebanese restaurant. Staff is friendly and very knowledgeable. I love coming in, because I know that I am gonna get really good food every time. There are no bad surprises. 

Although one small thing, is that their Fattouche salad should always be seasoned with the pomegranate molasses in the sauce, not just the bland lemon dressing. Also their super kafta tabliyeh comes too small for the price I was disappointed as the original sizes of a tabliyeh sandwich is rather generous. Does not match the super name... (maybe it was just that one time mishap).

The bread they brought needed seasoning - very bland
I really enjoyed the food, but I wouldn’t say it was authentic to tradition Arabic food. It is also quite overpriced for what you get.

In celebration of Canada’s 150th birthday (coincidently, Paramount is also celebrating their 10-year anniversary), the chain has created the shawarma poutine ($x). The dish incorporates the traditional ingredients – fries, cheese curds, and gravy (Montrealers, I know it should be poutine sauce) – while adding their signature touch by offering a choice of beef or chicken shawarma on top. Indeed, the beef adds a different flair to the dish, the earthy cumin rub on the meat generating a Mediterranean taste to the poutine. It’s a large portion and can definitely work as a main, but best shared in the Canadian spirit.

For Paramount newbies, the mezza plate ($8.99) is best to have on hand to dip their freshly baked pita bread into. Although the hot from the oven pita can be eaten on its own, the dough itself is rather tasteless; hence, a dunk in the hummus, moutabbal, or tabbouleh is key. Having had it at numerous locations, franchisees don’t seem to follow a standard recipe. Although the main ingredients are the same, the taste changes ever so slightly. At Paramount Eglinton, their moutabbal isn’t as salty making the grilled eggplant flavour a bit more pronounced; the tabbouleh is as fresh as ever.

Since it was my first time trying a manakeesh, an eastern Mediterranean topped flatbread, it seemed like a good idea to get the spicy chicken ($5.99) without cheese. Turns out you really need the cheese as after indulging in pizza for decades, eating something that

The Shawarma Poutine arrived first. This was as appetizing and delightful as the menu described it to be.  It was a huge portion and definitely shareable. It was a delicious indeed! What I loved particularly about it was that the gravy was rich and flavourful (the only way gravy should be on any poutine), there were some significant melted cheese curds (so important for poutine), lots of fries, and lots of good shawarma meat.
