Mosaic Grille at the Hyatt Regency Hotel is a destination for modern casual dining in the heart of Downtown Vancouver. Their seasonally-inspired contemporary menu features locally sourced produce, sustainable seafood and fresh ingredients. I had the opportunity to try their winter season dinner features. Here’s a look at the delicious creations by the Mosaic Grill team.
This restaurant is located in the Hyatt Regency Hotel on the second floor - and should not be confused with the Grain Bar downstairs in the lobby.
We enjoyed a relaxing dine in experience, overlooking the hustle and bustle of Burrard Street.
The menu is varied with a good selection of West Coast fare. There will certainly be something on the menu that will be to your taste.
The service is exemplary all around - warm, friendly and attentive when needed.
Great business lunch spot. Fast and attentive service and options for all tastes. Fish and Chips as well as turkey club are my standards here. Go on you birthday, let them know and be in for a nice surprise.
went here for a group dine out vancouver dinner, something that i always dread about dine out vancouver is that good restaurants became bad restaurants. There are a lot of reasons why that happens, but at the same time i also get it there are a lot more customer perhaps and the decrease in margin? anyway, so came here and pretty much ordered everything that there is in the dine out menu since there are around 10 ppl in the group. the place is excellent, kind of plush, and when we came in maybe because it's quite late night so there's not much people. Then the waitress was really attentive as well, love it. So everything was great from appetizer to desert. one thing that i must say, i ordered an ancient grain risotto for my main, i must say it's one of the main dish that i like, during the whole dine out vancouver sessions that i had. while the other main entrees are also definitely good, but mine is definitely something. the grains are the healthy part of it, and the risotto flavour is just savoury excellent
overall i would say i'm very pleased with the dine out vancouver in mosaic food was great, ambiance is good, and service is great, will recommend the place to other people as well. and will definitely come back.

I am not sure what all the hype is about. The food for us was mediocre. We had lunch here. We left not satisfied. The restaurant itself is beautiful with high ceilings and a view. The service was solid but that's to be expected at Hyatt. Having eaten at Hyatt restaurants around The globe this food was the worst of the bunch. I would like to try the seasonal dinner menu before final judgement. Apps were ok. Salmon was over cooked and bun was soggy. Not very well seasoned.

Classy joint with 20 foot floor to ceiling glass walls. The menu is interesting and refreshing and the service was of Hyatt quality. Had the Steak Salad. There were too many fries on top, however the steak was seasoned and cooked to perfection medium rare.

They do utilize fresh ingredients that were in season. I always love how they use unique ingredients that I would never eat on a normal basis. My favourite items were the spot prawn salad, scallops, lamb, and Sable Fish. All their entrees are pretty top notch.

This is not part of the package, but they served us warm cheddar-rosemary biscuits. Earth Apple Farms Mixed Kale , radishes, garlic scape dressing. The dressing was light, refreshing and tasty. White Asparagus Bisque , parmesan lavash. This warm, thick soup is perfectly complimented with the crunchiness and saltiness from the parmesan lavash.
It’s beautiful out, and the seasonal foods available are awesome too. Mosaic Grille & Bar (tucked away in the Hyatt Hotel on Burrard St) has refreshed its menu for the season. Thanks to Chef Jo, Kirby and I got to sample their current Spring offerings.
Mosaic Grill and Bar is a fantastic spot to dine when you're wanting a menu that's a bit more elevated than the usual crowd. They use local products, quality ingredients, and I can tell you firsthand that the chefs really care about the dishes they produce for their customers.
Overall it was a very satisfying meal and we walked away with a big smile on our face. For $27, the #SpringFling package a great deal for a 3-course dinner at a fine dining, hotel restaurant. I think it would make an awesome dinner date. Mr. recommends getting Bisque + Braised Veal Cheeks + Chocolate Cake. I prefer Salad + Braised Veal Cheeks + Creme Brulee. I learned that this will be the last VANEATS.ca package before evolving their website, so take advantage of this deal while you can! I’ll definitely miss their package offerings but I wish them all the best with the new direction.
I went to Mosaic for lunch. I had read a couple of good reviews, but never been. It was really nice. The service was very good, attentive & professional. The menu was varied & the meals all delicious. Fish & chips was elegantly served & so tastey. A colleague had a pulled pork quessedilla with arugula salad. Again, beautifully presented, a good portion & he said it was delicious. I would absolutely return.
Wonderful!. Had the VanEats package, and left full and satisfied. Our server Neil was delightful, as was the rest of the staff.
A la Minute Smoked Skuna Bay Salmon 3.5/5 - The texture was almost like sashimi, and it had a pleasant smoke flavour. The bitter greens, fresh tasting puree and lemon sauce were all great accompaniments. The kale nori was very salty though.
Sous Vide Lamb 4.5/5 - The lamb was so incredibly tender and juicy, like prime rib, but lamb! The outer nut crust wasn't very flavourful, however. There was a smattering of tiny eggplant and potato cubes, grilled onions, some grainy mustard and a brown sauce. All were just okay.
Mosaic Chocolate Cake 4/5 - The cake was moist and dense, and the frosting was silky smooth and creamy. An excellent cake, and the portion was HUGE.
We also had their complimentary bacon infused biscuits. The bacon flavour was nice, but the biscuits were very dense and kinda dry.

A la Minute Smoked Skuna Bay Salmon, kale nori, wasabi cauliflower puree 3.5/5 - We could smell the smoked when the dish was brought out. It was a little smaller in size.
Apple Lane Orchards Apples Bisque, roasted chestnut, spiced brandy cream 4/5 - Very strong apple flavoured. I could not really tell the roasted chestnut and the brandy cream.
Seared Baja Ocean Wise Scallops, sweet potato, figs, prosciutto 4.5/5 - 4 pieces of scallops. They weren't too big but reasonable. The figs were well prepared. I liked it very much.
Sous Vide Lamb, broccoli rabe, butternut squash, spiced walnuts - I didn't try this but it looks big. I would recommend boys to order this.
Grilled Curried Cauliflower Steak, baby carrots, dates, toasted pine nuts 3.5/5 - pretty good for a vegetarian dish.
Pumpkin and Nutmeg Creme Brulee 3/5 - Too rich and the spices were too strong.
Mosaic Chocolate Cake (signature triple layer cake) 4/5 - moist and gigantic. We only ate one slice and brought the rest home.
The scone was good. Our server was slow. We waited a long time even there were no other tables around. Our server was also absent-minded. He never forget to bring what we were asking. Very good deal for $27. I want to go back for more. I was a little worried that the dishes would be too small. The guys said it was okay too (especially when they saw the gigantic slice of cake).
Chocolate cake!. The chocolate cake at Mosaik is legendary! I dare anyone to find a better cake in the city. Also the menu is fully sustainable and organic. Great choice for dining in downtown Vancouver
The food here is pretty good, but you MUST come here for their famous CHOCOLATE CAKE. I'm not a huge fan of chocolate and chocolate cake, but this cake is to die for. If a no so huge fan of chocolate loves this cake, a chocolate lover will be sent to heaven. First, you have moist slabs of chocolate cake, then you have a chocolate ganache, and chocolate frosting. Then, it is dipped in chocolate and covered with chocolate sauce. It. Is. To. Die. For. The whole cake will easily feed 5 - 10 people depending on how much cake you like to eat. And, the whole cake is only $21! Come here for some appi's, but make sure you have enough room for the most amazing chocolate cake of your life.
We had the vaneats menu during our visit. the smoked salmon with avocado/sour cream and the grey cod entree were delicious! we also loved the capers in our complimentary dish of beef carpaccio. what really stood out was their service- Tracy was phenomenal! probably the beat service we've had in Vancouver. thank you, Tracy!
Friendly service, okay food.. Came here with some friends for the VanEats pass. There were nine of us, but with a reservation they had everything ready. The service was pretty quick, and people kept coming by asking if we needed anything - granted, it wasn't all that busy that night.
As for the food, the smoked salmon was very good, though the ribs were a bit dry. For something that they claim was cooked for a full day, it wasn't as tender as I would've liked to hope. The chocolate cake, however, was enormous - the menu says "mini", but there's nothing mini about it. The fact you get a free one on your birthday (with purchase of an entree) might make it worth it for me to return just for that.
All in all, pretty good. If you have the VanEats pass, it's well worth it.
Came for lunch. Very nice Devore and view. Comfortable, posh. Lovely service staff. Not a place to go of you need to hurry but perfect to meet friends or relax by yourself. Had the tuna sandwich. Very good. Garlic fries are addictive!
Attentive staff. Provided handbag hooks for the ladies and their purses. We tried the new create your own entree option. Interesting concept that we enjoyed and the food turned out pretty good. Highly recommend the chocolate cake! Leftovers were packed in a paper box and reusable bag. Very environmental friendly message that I appreciate. Prices were reasonable. Would visit again.

Cozy ambiance + nothing but smooth friendly service. each and every time i've been impressed with their menu items too. recently had the pan seared qualicum scallops...cooked to perfection...however, a little on the small side compared to a previous time i ordered these here. but i was sad to hear on my recent visit to mosaic that they had changed chefs. their previous chef now works for hyatt in the caribbean. too bad. he whipped out some fantastic dishes. the food just isn't the same now. i might come back if they change chefs cuz i wasn't diggin the dishes this new chef spun out.
Wonderful Dining Experience. From beginning to end, our dining experience was memorable and wonderful. The server was very pleasant. The food was delicately cooked, well seasoned and clean tasting. Seafood Chowder, Black Cod and even the Garlic Fries were excellent. The kids menu is very reasonable ($5.95) and very kid-friendly. Chicken strips, mac n cheese, etc.
We had a party of 7 for a birthday celebration, including a toddler, and they were very accommodating. As others have mentioned, they gave a beautiful cube of double chocolate truffle cake. It was dense, rich, decadent but not too sweet. It was nicely accompanied by the complimentary coffee, also for the birthday celebration.
Great fish and service. I visited the Mosaic Restaurant last night for the first time and was extremely impressed with the food and personal service.
I had purchased a groupon ($20 entitling me to $40 off our bill), including alcohol and was eager to try this new place out.It did not disappoint.
Our Irish waiter Steven was awesome.He was very welcoming and extremely knowledgeable about the menu.Upon his recommendation I had the paella for my entree. The mix of fresh seafood(cod,salmon,prawn and scallops) in the dish was delicious and each component cooked perfectly.
Definitely somewhere i will try again.Two thumbs up.!!
Pretty good. We sat at the bar and ate nachos and drank beer. Wish they had more of a local beer selection. Nachos were great and came quickly and prepared to order. Service was pretty good. Great place if you're staying in the hotel and want to grab an appetizer and beer before heading out. Didn't try the dinner, so I can't vouch for that!
Pretty good dineout vancouver menu. We went here for dineout and it was pretty good. I have the crab cake which was pretty awesome. Then for the main course we had the seafood bouillabaisse. THis was okay, but not filling at all.
Overall, I enjoyed my experience at Mosaic. I would definitely come back again next season to try out what Chef Heinrich has put on the menu. I loved the presentation of all the food, and the waitress was really nice. A few misses here and there but next time, I’ll try other things (like brunch and other desserts)!
To start us off, the waitress brought us these cute little scones. The server didn’t tell us what they were made of but they tasted smokey bacony and had a dash of sea salt on top. Grayson loved these little guys because they were extremely light and fluffy. We were asked if we wanted another serving of them, and we eagerly told her “yes.” I’m glad we did too because our appetizers took almost an hour to arrive at our table. For our appetizer we both picked the smoked salmon and avocado terrine. I was most excited about this one out of everything we ordered but I was left disappointed. Whether you’re a local or a tourist, Mosaic Bar & Grille (located inside Hyatt Regency Vancouver) is a place you must visit, because the food will make your tastebuds second guess if you’re really eating at a hotel restaurant.
Yes, we’ve written about Executive Chef Thomas Heinrich‘s food in an earlier post featured on VANEATS (click here to read it). Since then, Chef Heinrich has created a series of several different chef tasting menus based on seasonal ingredients, which are released on a bi-weekly basis. His passion for local and sustainable ingredients really comes through in his cooking.
The prices at Mosaic are extremely reasonable. Appetizers are about $9 to $13 dollars and entrees are under $30 each (unless you choose an 8 oz meat). The lower prices allow each guest to have a two course meal for under $40. The presentation and quality of the dishes are well worth the price. Menus seem to change quite frequently according to available produce and ingredients. Too bad the Watermelon Panna Cotta was only available through the tasting menu; it looked like such a beautiful dessert! We were going to try their famous chocolate layer cake ($20 for a rather large slice) but decided to pay a visit to Bella Gelateria instead. Maybe next time when my entree isn't so filling. The location is also extremely accessible as it is right beside Burrard Skytrain Station. This will definitely stay on my list of places to have dinner to celebrate special events. We were greeted by a very cheerful and friendly hostess who guided us to our table. It was dim, pretty empty and cozy atmosphere. I was surprised to see a grand hotel using electric candles for all of their dining tables. It still looked nice though. I ordered the Reuben $15 under the Bar menu. As soon as it arrived, I could smell the garlic fries. MMMmmmmm!! So delicious!!! Perhaps the best fries I’ve ever had. (unless you hate garlic). It had house-cured corned beef, apple cider, sauerkraut, and provolone between marbled rye. Very delicious and two thumbs up. I was happy to read that Mosaic Grille uses locally sourced produce, sustainable seafood and choice ingredients with careful and creative preparation. Those choices are always a plus. Sheepie ordered the Chocolate cake with poached pear $8 which was gluten free. I took a bite, and it was super light, creamy and melted smoothly like ice cream. It tasted like there were barely and sugar which was a huge plus for me, but sweet
Mosaic has happily jumped on the spot prawn trend and Executive Chef Thomas Heinrich has done a spectacular job of showcasing these local Ocean Wise beauties. The tasting menu is $45 without wine pairings and $65 with more than generous portions.
This was a hearty soup, with a unique tart note from the granny smith apples. The texture from the apple pieces added a pleasant crunch, and the spiced brandy cream tasted fantastic as it melted gently into the bisque.
This dish tasted like a light and creamy pumpkin pie filling. If you like festive fall flavours, you will love this dish
Once again I headed back to the Hyatt to try out the Chef Heinrich's fall menu for Mosaic Grille & Bar. We started off the evening with the beautiful fall salad ($10) consisting of baby carrots, beets, tokyo turnips, fennel, and pumpkin. First off, the food selection seemed to have less options than on my first visit. Although I did notice that they added a self-serve congee station. I actually wasn’t entirely impressed by the mushroom congee as it was super bland (yes, I know congee is generally bland).

After Chef Thomas Heinrich’s departure, I was curious to see what would happen to Mosaic at the Hyatt Vancouver. Thankfully, Chef Jo has taken over and is perfectly capable to bring great offers to the table. Now throughout the winter, Mosaic has switched over to a Winter menu that highlights the bounty of the season.
As if I needed another reason to be crushing on @cheftheinrich, he’s gone and done another delicious tasting menu – this one inspired by his recent trip to Taiwan. The dishes, which have Taiwanese flavours combined with French cooking techniques, correspond to a specific experience or region that he visited. And oh, are they ever inspiring!
For our experience we started with the Fall Salad – the tangerine dressing is sublime! This salad made with in-season vegetables such as baby carrots, beets, Tokyo turnips, fennel and pumpkin will leave your senses tingling. The presentation is very pleasing. Such a pretty dish.
The Mosaic Bar and Grille has reopened its doors with a new look, a revamped menu and a new Chef: Thomas Heinrich. The new VANEATS.ca dining pass is your passport to experience some of the best Mosaic has to offer. The dining pass includes three courses: - Your choice of starter: Local Seasonal Spring Salad This is one of the most beautiful salads I’ve ever eaten, such wonderful presentation. Fresh peas, fava beans, watermelon radishes together with house made sheep milk ricotto mixed in a citrus and mustard dressing. The dressing is very tangy but the ricotto cuts into it nicely. If you’re not in the mood for a salad, you can always try the Warm a la Minute Smoked Skuna Bay Salmon This dish comes covered in a glass dome to keep the heat in. The salmon is smoked for an hour and has a wonderfully creamy consistency. The avocado terrine blends so well with the salmon. Taking this dish from fantastic to extraordinary, the salmon is topped with certified organic sturgeon caviar. To fini
Yellowfin Tuna ($19) is presented on the dish with pickled radish, sea beans, cucumber, black garlic, yuzu dressing. The delicate tuna was really delicious and the dressing paired perfectly.
Papayas ($16) has the white spot shrimp, cucumber, papaya puree, and cilantro lime fluid gel. This dish was beautiful and delicious. The shrimp was pretty darn delicious!
Hakka tea crusted line caught ling cod is beautifully presented. This dish also has ginger, green onion, lemon vinegar fluid gel and the peanut mochi balls. The cod was cooked perfectly and the tea was not overpowering. It added a nice subtle flavour to the fish.
What I like most about Mosaic is that their menu is always changing from season to season to adapt to the produce in season. Mosaic is hidden away in the Hyatt Hotel near Burrard Station.
Mosaic always has a special Chef Tasting Menu by Chef Thomas Heinrich with a specific theme. This time it was a Chinese inspired menu. I thought it was pretty interesting for him to pull off a Chinese menu. I had to put my taste buds to the test and see how it would be possible.
Their menu’s change often to really adapt to the seasonal ingredients. You are guaranteed that you will find something yummy on their new Summer menu.
There is not too much options for the breakfast. I got the pancakes🤍 Actually it was so yummy! our server also was excellent. She was from Poland. Sorry I forgot the name her. But thank you 🤍

16hrs away from home visiting family and we decided to stop here. The environment was absolutely amazing as well as the food and whole staff. Would definitely give this place more than 5 stars if possible. Wish we had a place to eat like this in our home town. Will be back for sure when visiting family here again.
I really enjoyed my time here. We came a little earlier (5pm) so the restaurant was quiet and we got a seat looking out the window over burrard street. We went for dine out vancouver 2018. The service was great. I was really impressed by the taste and plating of the food. I would come back for a special occasion and recommend this place for a romantic but not overly lavish dinner out.
The Christmas dinner is fascinating. The salad and soup has its own characteristics. The fish and steak are good and pairing well with the wine. The dessert is awesome with the decoration and chocolates.
The food was excellent, every dish we tried had a combination of flavours and textures that worked very well together, the effort of the chef was evident. We were especially impressed by the fish tacos, the fish was cooked just right (often fish tacos at other restaurants we visited have it either overdone or underdone). The service was fairly quick and the staff were friendly. Prices were reasonable. The seats and atmosphere were pleasant.
Went for their Christmas brunch. Service was good and plenty of options for what you are paying for this time of the year.
