Finally amazing korean dessert in Edmonton!! The fact the bingsoo does not have water (100%milk) makes high quality and tasty! Will definitely come back! And cant wait for the grand opening.

The Shaved Ice craze has taken Edmonton by storm in the last couple years, going from zero places that offer shaved ice, to over 5. Located in Edmonton’s K-mall, is Let Eat Snow. By far is my favourite place for shaved ice! Being in the K-mall, there’s an ample amount of parking!. They often have a seasonal flavour and many different kinds of desserts. On one of the times I went, I got the Taro shaved ice. Not too sweet, and delicious! It had a nice strong Taro flavour and overall was really good. Their other shaved ice flavours are really good, and I appreciate finding nice little treats at the bottom of the shaved ice! There’s often bits of cookies, or something crunchy that gives that nice and welcomed added texture!

Friendly and fast service, with interesting additions to the flavored shaved milk ice like crunchy cornflakes in the mango bingsoo to give it a nice textural element. The pizza crust with the mochi added to it was really neat- you'll either love or hate the combo of melty gorgonzola, soft chewy mochi, almonds and honey... it felt like eating a cheese plate in one bite. Definitely going to come back to try their other fruit bingsoo and bubbletea.

Update: the oreo bingsoo is a must try- the lightly chocolate flavored milk ice is delectable with oreo crumbs to add in just the right amount of chocolate, icecream to add creaminess and chocopuffs for crunch. Yum!

LetEatSnow is an outstanding Korean shaved ice (bingsu) and dessert cafe - a truly welcome addition to Edmotnon's growing K-food scene. Korean shaved ice has essentially gone through three phases: 1. traditional, simple bingsu with red bean, shaved ice, and some fruit. 2. More elaborate bingsu with more adventurous flavours and combinations. 3. Finely shaved ice - I'm talking, freshly powdered Marmot Basin snow! - with sweet condensed milk, or fruit, or other flavours presented artistically and beautifully! It really is a work of art. LetEatSnow does the third phase right with milk-based shaved ice, cold, sweet, and refreshing. Not the only bingsu place in YEG now, but my favourite. It's slightly pricier but the taste is superior to its competitors with fresh flavours. The milk-based ice really does it for me.

Let Eat Snow is a Korean dessert cafe on 34 Ave and 93 St specializing in bing — shaved ice made with 100% milk. This is what sets it apart from the competition, and you can definitely taste the difference in the texture of the ice which really feels more like soft and fluffy snow. The best part is that the texture remains the same even as you get to the bottom of the bowl. Somehow the snow doesn't meld together into a big clump but remains as fine flakes throughout. The picture below shows the snow bing ($11.50) which is regular flavoured snow with sweet strawberries. The strawberry chunks are imported because that is the only way to guarantee sweetness year-round.

The Korean bingsoo craze is in full swing these days. As always is the case in Edmonton, they open at the same time. Mind boggling. Snowy Dessert, Snowy Village, Snow Bear Dessert Café and Let Eat Snow. Yes, that’s how it’s spelt. LES is probably the least well known one but it shouldn’t be.

I was pleasantly surprised by this bing soo place. With the recent openings of multiple locations selling bing soo around the city, I have been slowly trying them all. I would rank this at the top of all the current locations.

The sweetness of the bing soo seemed a little bland at first but I think it's because all the other locations are so sweet. By the end of finishing it, I think the sweetness was just right. I enjoyed the touch of a scoop of ice cream on top and the crunchiness of the corn flakes at the bottom. Also, unlike the other bing soo places, I was able to enjoy it right down to the bottom without a puddle of melted milk waiting for me.

A big plus at this location is their yummy cinnamon croissants. It's not a gross taiyaki like other "snowy" locations.

Finally, the interior is nicely decorated with adequate seating. The atmosphere was pleasant.

I'll start off by giving this latest bingsoo place a 4.0.  I've only been there once and I shared a bingsoo so I can't say I've tried everything yet.  The initial impression was excellent.  The owner was very nice and explained to me what bingsoo is and how she is different from her competitors.  I especially enjoyed the quaintness and the decor inside the establishment.  I can honestly say that it's the first time in a long time where I feel that relaxed inside a cafe/restaurant/etc.  

The bingsoo that I had was very dry and flaky.  It wasn't super wet or clumped together like snowy dessert or snowy village.  The flavour was very light yet it was enjoyable.  I can almost eat the whole thing myself and then some.  No matter how full you are, I think you'd be ready to enjoy a whole bingsoo to yourself.  I also like how the toppings are layered because the snow flakes are very light and you can't just put everything on top.  The cereal flakes are also interestingly at the bottom, but this shouldn't come as a surprise because of how dry the bingsoo really is.  By the time I was done my bingsoo, I can still enjoy the crispyness of the cereal flakes.  You can't say that for most other bingsoo in town.  This bingsoo is a true food engineering marvel.

I can't wait to come back after another big meal elsewhere (maybe one of those Korean restaurants nearby, like Korea Grill, or Pocha Seoul) and sit down here for a nice, relaxing serving of bingsoo.  Or, if I feel adventurous, I just might try their cheesecake and drinks menu.  This is the first non-chain bingsoo place in town and it has a soul like no other.
