We just finished an amazing dinner at Three Ravens! My husband and I have eaten all over Banff and Canmore and have never even heard of this place. On the recommendation of a friend, we came here for our anniversary.
The food is so good-as much as possible it is locally sourced, and the beef sirloin and salmon were clearly excellent quality meat selections.
Good:
1) best Creme brûlée I have had. Ever. It was big enough for two people and the mix of berries, matcha meringue wafers, and presentation was phenomenal
2) service is quick and attentive without being overbearing
3) server is knowledgable and answers all questions
4) private and quiet enclosed dining space
5) flavour profiles of all food both complex and complementary
There are a couple considerations where the points were lost:
1) the restaurant is very difficult to find. It is in the top floor of the Sally Borden fitness facility, which, in the daytime I'm sure is easy to find. However, coming at night and with little signage it was a bit frustrating.
2) the restaurant itself, while enclosed, is next to a dining hall that appears to serve customers buffet style(which can be a bit off putting depending on the time of day). The bathrooms are also a bit far from Three Ravens.
3) mobility considerations-depending on the route you take to get there, we had to walk up a lengthy sidewalk, take an elevator to the main floor, walk outside to another elevator, and then outside again to the dining area
Overall, the food and service is impeccable, which is key to the restaurant experience(and peppered with amuse bouche offering and delicious after dinner chocolate!) We will be back.
Took a short jaunt out to Banff for the night. Decided to try out a small little restaurant on the basis that John Gilchrist had mentioned it was quite the place. Although somewhat hidden from the regular Banff Ave. It is worth the short drive up Tunnel Mountain Road.
Started off with this crazy little amuse bouche of cherry whiskey pannacotta and balsamic beads. Normally I only have cherry whiskey at xmas time but I may just have to make this one myself sometime. We started with an appy of elk tartare which was delightful and not gamey as well. Wifey enjoyed the citrus crusted cod with pickled cauliflower and humboldt squid. Not really keen on the prep for the squid but the dish was quite flavorful. I opted for the bison striploin with mushroom chips, siracha popcorn and grits with a lovely port jus as well. Flavors were right on par, meat cooked to a perfect mid rare.
The wine selection is quite extensive with mot being to expensive, but you definitely go big if you want.
The dessert menu has the nice idea of choosimg tastings of 2 or 3 items for a set price. Although we did not indulge, the items sounded amazing.
All in all a nice little place to enjoy a dinner. If the restaurant does fill up I could see it getting a little loud in there but do not let that deter you from a visit.
Excellent food, perfectly crafted. Service was friendly, wine list assembled with care and well priced. Would recommend to anyone seeking a fine dining experience.
Three Rvens claws the spirit out of Eden and Banff Springs. Makes sense that The Banff Centre would kick Eden and BSH.
Long live the arts.
Best meal in numerous years.

If any one reading this are staying at Rimrock or BSH, then get in your cars and head up Tunnel Mountain.
Hidden Gem in Banff. Had a great dinner with some friends and family. This place is really a hidden gem offering a great selection of fine foods. My cousin had a great bison steak and I had the sablefish that was perfectly done. They also offer great views of the Banff and Valley!
Anniversary supper. It was a great supper we would defiantly come back. You have to have the Ahi Tuna. Excellent portion and it was done perfect. Great job team Three Ravens.
Elegant and well priced for kids. It has been quite some time since I went to this restaurant, but I remember it being a very pleasant experience. I had a jelly sampler type thing for an appetizer, fish (I think it was trout) with some veggies on the side for the main course, and a chocolate truffle cake for dessert, all on the kids menu for around $10.00 (yes, the whole meal!). Beautiful location, delicious cuisine, and a great place if you want to treat your kids :)

Exceptionally reasonably priced wine. Great service. Incredible food. Great appetizers. The beef was one of the most incredible things I've ever tasted. Highly reccomended.
